WAIW

I'm so happy it's already Wednesday. Gotta love short weeks! And gotta love What I Ate Wednesday! I know it's all your favorite day of the week lol. 
 
I started out my morning with one of my new favorite breakfasts. The 2 ingredient pancake!
1 egg and 1 banana. That's it. Then feel free to play with other ingredients. I added blueberries to mine before cooking, and then almond butter and pumpkin butter to the top. My friend Chelsea got me the pumpkin butter for my birthday and it's like crack. It's sooooo good.
 
I had a handful of trail mix a while later to get me through to lunch.
Morningstar veggie patty on a deli flat with provolone cheese and spinach. Apple on the side. I'm running a 5k race today after work so I wanted something with carbs for a bit more energy! 
 
When I got home from work I ate an apple cinnamon greek yogurt.
 
I'm getting ready to go into Wilmington for the 5k tonight at 6:30.  When I get home I will most like be chowing on some boring salad, so I will entertain you all with a much more exciting meal, last night's Cheesesteak Stuffed Peppers.  Another pinterest recipe of course.
 
The recipe was so simple. Saute onions and mushrooms, add roast beef, stuff peppers, cover in cheese and bake.

Ummm hello. These were delicious.  Matt loved them too! Success!  I love when I find recipes that we both like.

Weekend In Pictures

I've had such a nice relaxing Labor Day weekend. It started out with roasting some marshmellows and having a couple of drinks by the bonfire.

Saturday I woke up for my long run.  12 miles in 2.00.28! Right on track for a 2.10 finish...hopefully.  The only bummer of my run....some rude person decided to take my frozen water and GU chomps from beside my car.  I realized this after mile 10 and was furious because I was so thirsty. I finished my run, begged some random couple for some of their water lol, and sped home to get my recovery smoothie
Thoughts of this smoothie usually get me through the last bits of my long run. "finish and get your smoothie" haha. 
 
After I washed up I had some baking to do for our friends Joe and Cara. They just had a baby and we were going to meet her later that day. I couldn't go empty handed so I made her some oatmeal muffins
Before they were baked. The top row has blueberries, raspberries in the middle and craisins and walnuts on the bottom.
 
Grabbed a quick lunch before we headed out:

Later I munched on my birthday gift from my sister to hold me over until dinner:

On Sunday I woke up to sore legs. I did a quick 40 minute arm and ab workout before we headed out to Chadds Ford Winery with Matt's sister and husband.

Unfortunately the weather was CRAP. It started pouring on us and they didn't have any indoor seating. We headed home, but not before stopping somewhere very exciting!!!!
I popped my whole foods cherry haha.
Grind your own nut butter station. I had never been in a whole foods before Sunday, and really wish it wasn't so far away from my house. I just walked up and down every aisle oogling all the food goodies. I didn't buy much, just some trail mix, but I loved seeing what everyone was talking about.
 
For dinner I made Matt and "man meal."  I cooked pork ribs for the first time ever. I cooked them in th crockpot with some bbq sauce and onions.
Ribs, potato salad made with greek yogurt and salad. The ribs were pretty good.  Matt loved them so I think I earned some major wife probs.  This is a thank you for him always trying all my weird food that I make him eat.
 
We had a nice relaxing night after dinner, just hanging out and watching a movie. 
 
This morning I woke up to more rain! Our gym was closed today for the holiday, so I called my rents and asked them if I could use their treadmill after I ate breakfast.
 
For breakfast I made one of Tina's two ingredient pancakes for breakfast. All it is is one banana and one egg! So simple. I also added some blueberries and cinnamon to mine.
I topped mine with peanut butter and pumpkin butter.
 
Then I was off to my parent's house to run 5 miles. I finished in 49.30 and my legs were not very happy. They are still a little sore from Saturday so the run was difficult.  Matt and I are currently putting a bunch of our wedding pictures in frames and hanging them around the house!! Then we are off to a rainy day bbq.

WAIW Kale Edition

Happy Wednesday and WAIW
 
I managed to get a whole day of eats in pictures...almost, with some of my other favorite meals this week at the end.
Breakfast Smoothie
1/2 cup plain nonfat chobani, 1 banana, 4 frozen strawberries, 1 tbsp PB2, 1 tbsp almond butter, almond milk to get everything moving.
 
Snack:
Almond Flour Muffins! I used this recipe and added some spices, craisins and walnuts. I used egg whites instead of eggs and made them into 6 muffins instead of 4.  I had mine with some pumpkin butter and it was delicious!
 
Lunch:
I've been big on salads lately.  This one was made with spinach, egg whites, black beans, carrots, string beans, avocado and some balsalmic dressing. I also ate half a KIND bar with my lunch.
 
Snack:
unpicuted unsweetened applesauce before my run. easy on the stomach.

Dinner:
Ham, Sauteed Kale with black beans and some Annie's Mac and Cheese
 
For my late night snack I had some raspberries with cottage cheese and some dark chocolate.
 
I've been loving kale lately and decided to try kale chips last night.  And guess what? Matt actually liked them! I couldn't believe it!
I cooked the kale chips at 350 for 15 minutes and they came out perfectly crispy. I had them with my favorite buffalo pulled chicken. I cook some chicken breasts in the crockpot all day, and then mix it wiht Frank's Red Hotsauce when I get home. Then I made a blue cheese sauce (2 tbsp blue cheese, 3 tbsp plain greek yogurt, 1 tbsp white vinegar) to put on top.
 
Sunday we went out to dinner with my parents for my dad's birthday and the special of the night was seared tuna....umm yes.
This was amazing. I love seared tuna. Whenever I see it on a menu, I order it.

Weekend Happenings

This weekend has unexpectedly been a lot of fun. We didn't have too much planned going into it, but we ended up doing a couple of spur of the moment things that made the weekend perfect.  Friday night Matt and I were at dinner when we got a call from one of my friends from college who just so happen to be passing through Delaware.  We left dinner and went to main st. to meet her and her fiance for some drinks!

I definitely enjoyed the sangria that I had, but stuck to just one knowing I would be waking up early Saturday for my long run. I was up at 5:45am eating my half bagel with almond butter before heading out to the park.  11 miles was tough. My hips and knees were really sore after I finished, and they still are today. Overall, I think my run went really well thanks to the cool weather.
I finished with a 10.01 pace, my fastest yet! I stopped twice to chug my water/coconut water mix and have a GU Chomp. 
Notice how it was 9am with no sun.  I hope the day of our marathon can be the same way.
 
When I got home I was starving so I whipped up a smoothie to refuel.
1 scoop protein powder, 2 spoonfulls cottage cheese, 1 spoonful peanut butter, a bunch of frozen raspberries. 
 
When Matt and I were both done running, had showered and eaten lunch, we randomly decided to go to the circus down the road.  I saw it on my way home from work on Friday and thought it would be something fun to do during the day.

We had a lot of fun, but I'm pretty sure that we were the only people there without a child next to us hahah.  It will be fun to go back one day when we have kids though.
 
After the circus we went home, had a snack and then went to our friend's house for some pizza and marshmellow roasting. We had a great time catching up with everyone and it was nice to let loose a little. We got home around midnight and I passed out! I was soooooo tired.  I slept so well last night. 
 
When I woke up this morning I decided to do a strength workout after lunch. Matt and I both took advantage of our free weights in our basement.
 
This is my serious face....or my poop face. Can't decide which one.
 
Champ usually just hovers around and gets in the way when we work out, but today Matt decided to use him haha. Champ Squats!
That's a 25lb squat right there!
 
We just got back from seeing The Campaign (which was hilarious) and are getting ready to go meet my parents for my dad's birthday dinner.

WIAW Amazing Microwave Chocolate Cake

Happy hump day WIAW! Thank goodness there are only 2 days left until the weekend! I was actually pretty good at keeping track of my eats today...until the end of the day that is when I was starving and devoured my whole dinner before taking pictures.
 
For breakfast lately I've been alternating between Oatmeal Minus The Oats and my favorite Overnight Oats.  This morning I went with my usual...apple cinnamon overnight oats.
 
Mid morning I scarfed a mini KIND bar to hold me over until lunch. For lunches lately I've been obsessed with salads, all kind of salads. This on was filled with spinach, edamame, carrots, broccoli, snap peas, black beans, craisins, blue cheese and a some fried egg whites on top. I had no hard boiled eggs so I went with the next big thing.
 
Right before volleyball I ate a chopped up apple with cottage cheese and almond butter.
I thought this would hold me over for a while, but I was hungry again in a couple of hours. We had a double header at volleyball and thank God one of our friends made popsicles to bring.  I was starting to get HANGRY.  That is never pretty.
 
When I got home from volleyball I scarfed dinner without a second thought. It was just a boring half turkey sandwich with pepper jack cheese, avocado, onions, spinach and tomatoes.  I also had a bunch of grapes.  Instead I will intertain you with our dinner from last night,  Hawaiian Turkey Burgers.
Pretty much a regular turkey burger with provalone cheese and a grilled pineapple ring on top. I had sauteed kale and black beans on the side.
 
Dessert was AMAZING. I'm not sure what website I found this on, but I jotted down the recipe to try.  It is a single serving microwave brownie.
Ingredients:
1/4 cup cocoa powder
2 tbsp liquid egg whites
3 tbsp unsweetened almond milk
2 tbsp unsweetened applesauce
1/8 tsp baking powder
1 tsp maple syrup or honey
 
Mix all ingredients well. Microwave on high for 3.5 minutes. SO GOOD!!
 
I split mine in half. I had the other half last night.  A drizzle of peanut butter makes everything better.  The recipe, without the peanut butter is right around 100 calories.  It's super rich, so if you aren't a fan of dark chocolate you might want to add some more sweetener.
 
 
My legs are finally feeling better today!! I ran 5 miles yesterday and was dead when I finished. I got home and stretched and foam rolled which I think helped a lot. I have 3 miles to run tomorrow along with an upper body and abs workout.  Have a good rest of the week everyone!

Beach, Birthday and a Wedding

My week of birthday celebrations is coming to an end....yes I get an entire week haha.  I got home Thursday from work, the day before my birthday, with flowers waiting for me :)  It was the perfect start to my long weekend. I took Friday off because we were going to our friend's wedding at the beach that night, and because I think it's no fun to work on your birthday.  Since I had off, I decided to move my long run to Friday morning. My body woke me up at 5:25am. Yikes. So I went with it, and went to the park to run 10 miles. I started my morning with a half a bagel with almond butter and craisins on top. Then I was off!
Me after my 10! I finished with a 10:04 pace and felt really good. I felt so much better than my 10 mile run last weekend. I got home, showered up and got to packing for the beach!

I made myself a high protein recovery meal of "oatmeal minus the oats."  I've been eating a lot of this lately and have found that I like it cold better than hot.

In an almost empty peanut butter jar. 

In the mix:
1 mashed banana
1/2 cup egg whites
1/4 cup almond milk
1 tbsp ground flax
several shakes cinnamon
1/2 tsp vanilla
handfull of craisins

Heat on the stove until it starts to thicken up and then enjoy.  I usually make mine the night before and stick it in the fridge to have the next morning.

After stuffing my face we were off! We drove 2 hours, checked into our hotel and then headed over to the beach for the wedding.

After the ceremony we went to Irish Eyes for the reception.  We ate some really good food and enjoyed the views of the marina.
I may have taken the nautical theme too far, but I loved my dress lol. 

Matt and I were both pretty tired that night, so we went to bed early and saved the bars for Saturday night. Saturday morning we woke up to a cloudy day.  The morning was chilly and windy, but by noon the sun was coming out and we got a couple of hours in at the beach before heading out to Jamfest at a local bar.

Holy crowdedness.  That place was packed! I almost got smooshed trying to get to the bathroom.

Later that night we met up with a bunch of friends for dinner, then went back to the bars.  I was proud of my usually early to bed self.  I made it to 1:30am!!

Sunday we got some time in at the beach, and then went home :(  Even though we were tired, Matt and I both wanted to get a strength workout in before we crashed.  I decided to do this Medacine Ball Workout from Blonde Ponytail:
I used a 10lb medacine ball and my inner thighs and arms are killing me today!



I was so depressed going to work this morning and then I walked into my office and saw this:
My birthday cubical.  Work flew by, thank goodness, and I went for a quick run after work.  3 miles went by quickly and I finished in 28.42!

When I got home I did a quick crossfit style workout to finish off. 
3 rounds as quickly as possible
25 dips
25 crunches
25 pushups
25 russian twists

Time to go make my breakfast/lunch for tomorrow.
