TGI...Almost Friday

My day in a nutshell was....BUSY!! I think this first 5 day week after the holidays is kicking my butt.  I had a busy day at work (I basically had two different assays running while trying to set up two more to run tomorrow...I know this means nothing to most of you lol).  I got home, took the pup for a walk since it was in the 50's again, and then did some vacuuming.  Matt's extended family is coming in from Virginia this weekend and our house needs some serious TLC before we have people over. 
Next up was working on my grocery list.  This includes looking at what coupons I have and going through the circular for the week as well as planning my meals.  I always go to the grocery store on Fridays after work because I figure who wants to be at the grocery store on a Friday? Not me. So I go hoping it won't be crowded.

Dinner was easy heating up some leftovers:
Leftover Italian Pizza Bake.  Even better the second time around.

After dinner and an episode of Dexter, I was finally feeling a bit of motivation to fit in a workout.  Better late than never.  I started with Peanut Butter Finger's workout.  I loved this workout! Killed my legs!
For the weights I used either 10lb weights or 8lb weights.
After I finished this workout I moved on to this workout from GoTheXtraMile.  I did this workout over the weekend and loved it.  I got Matt addicted too.  I went through the workouts once and used 8lb dumbells.  My favorite move:

My workout took me about 35 minutes all together. Not bad. And I was definitely sweating by the end.  I'll hopefully be making it to they gym on Saturday morning!

So happy tomorrow is Friday and that my company is awesome and is giving us Monday off for MLK day!! 


Any tips for finding coupons??
I look in the Sunday paper and online for coupons but I only ever manage to find a few that I would actually use. I really don't want to end up like one of those crazy coupon ladies after all.

What I Ate Wednesday

My very exciting meals from Wednesday.  I managed to keep my meals pretty balanced today I think! Always love when that happens.

Don't hate me...I eat the same thing daily for breakfast and love it.  I can't stop.
Breakfast: Overnight Oats using Pomegranate Chobani.  1 container Chobani, 1/4 cpu old fashioned oats, sprinkle of wheat germ, splash of milk, spoonfull of almond butter and some craisins and granolla to top it off.

Mid morning snack on some of these bad boys (gift from my boss...she knows I love nuts lol)

Lunch:
Not pictured :( I'm so bad.  I gobbled it up too fast. I had peanut butter and apple butter on a whole wheat deli flat and an apple.  I finished it off with a peice of dark chocolate per usual.

Dinner:
Left over crab cake in a salad full of spinach, snow peas, carrots, chopped pear, and blue cheese (with more pear on the side).  I also had a small peice of cornbread from dinner Sunday night. I topped it with Newman's Own light italian dressing.


Snack:
Mashed up banana, some cliff bar, spoonfull of apple butter, craisins and granolla. Pop it in the microwave for 30 seconds. My new favorite late night snack.

I also got in an hour workout today at the gym.  I did 30 minutes of strenth training concentrating on my legs and abs.  Then I did ten minutes each on the bike and eliptical sprinting.  I moved on to the treadmill last and attempted to spring a mile.  I finished it in 8:20.  I think I could've picked  it up a little, but switching machines in ten minute intervals did get me sweating fast.  It also kept me interested in the workout. 

I haven't taken a class at the gym in a really long time because they don't really fit into my schedule anymore.  I have Monday off from work for MLK day and my gym just so happens to have a spin class at noon.  I'm so excited to take it! I haven't taken a spin class in a really long time and I can say that it's definitely one of the hardest workouts out there.  I thought about being an instructor for a little, but realized it might be a little difficult with my full time job...mrrrr.

Kicking Butt

When I looked at the 7 day forecast over the weekend I notice that one day in particular looked really great for running.  It went a little above 50 today so I decided to go for a run around University of Delaware's campus after work. 

This is one of my favorite places to run around us because it brings back so many great memories from my college days!

Today was one of the best run's I've had in a while (haha that kind of sounds wrong).   I ran 4.23 miles in just over 37 minutes.  This is definitely fast for me.  I felt like I had wings on my ass or something.  When I got home I made a quick and easy dinner that I found on Peanut Butter Fingers.  I made her Italian Pizza Bake using Bisquick Heart Smart mix. 

Recipe:
1/3 cup bisquick mis
1 tbsp water
2 tbsp egg whites
1/8 tsp garlic powder
1/2 chopped bell pepper
1 tukey sausage link sliced
3/4 cup canned diced tomatoes drained
1/2 cup shredded cheese
1/8 tsp each parsley, oregano, basil

Preheat oven to 400 degrees. Spray a bread pan with nonstick spray. Mix bisquick, water, egg whites and garlic powder in a bowl and pour in to the pan. Cook bell pepper and sausage in a pan, then add spices and tomatoes until warm.  Spoon over bisquick mix and top with cheese. Bake for 23 minutes.
Mine kind of fell apart, but it still tasted good.  I had it with some veggies and hummus.

Obsessed

So I really had a boring boring day today.  My day had no highlights in particular. I went to work, came home, cooked an early dinner and then met with an officiant for the wedding.  My legs are killing me today so I took a day off from working out.  I'm hoping to get a good run in after work tomorrow since it will be 50 degrees! Watch out!
So I'm sitting here watching one of my guiliest pleasures....The Kardashians.
I mean seriously, who dresses like this for their Christmas card anyways??  I totally wanted to be one of those strong people who vowed to stop watching the show when Kim and Kris got divorced in 70 some days.  Well, I failed. It's too freaking good.  I'm OBSESSED!!  I even have Matt watching it with me, somewhat against his will I'll admit.  I always tell people I don't have enough drama in my own life so I have to turn to tv to watch other people's drama.
This inspired my post today...things I'm currently obsessed with.
Greek Yogurt
I cannot go a day without eating this stuff. Overnight oats every morning. Creature of habit.

Well it's 845 and I'm considering watching the bachelor....but I don't think I can handle being addicted to another horrible tv show.  Here's to hoping my life is more worth blogging about tomorrow!

Registering and Beef Tagine

I started off my Sunday with my favorite breakfast...I'm such a creature of habit after all.  Pumpkin Pie Overnight Oats.
1/3 cup old fashioned oats, 1/3 cup plain nonfat greek yogurt, 1/3 cup pumpkin, splash of milk, a few shakes of cinnamon and pumkin pie spice.  Let it sit overnight and top with peanut butter, craisins and granolla. Nothing gets better in my book.

Then I headed to the gym for a quick workout. My legs are pretty sore from my workout yesterday, so I decided to stick to working on my arms and abs today as far as weights went.  Then I hopped on the eliptical for 20 minutes and the treadmill for 20 minutes.  Honestly my ass is killing me haha. I think I've been waddling all day. 
Lunch:
Whole wheat deli flat with natural peanut butter and apple butter along with an apple, some veggies and a laughing cow cheese wedge.  Man I hate our plates haha. It's definitely time to change these. Time to Register!!
Matt and I finally finished registering. And no we did not get any monogrammed towels. I just had to take a picture with this one honoring my future last name.
I have to give it to BB&B they gave us a sweet little care package full of goodies including these:

Time for dinner! I made Beef Tagine tonight and some cornbread to go on the side. I found this recipe on cooking light's website and put my little spin on it. I added sweet potatoes instead of butternut squash and also added some carrots and sliced  mushrooms.
2tsp paprika
1 tsp cinnamon
3/4 tsp salt
1/2 tsp ground ginger
1/2 tsp ground red pepper
1/4 tsp black pepper
1 lb beef (I used pre cut beef for a stew)
1 tbsp olive oil
4 shallots quartered
4 garlic cloves chopped
1/2 cup low sodium chicken broth
1 14.5oz can no salt added diced tomatoes undrained
3 cups sweet potato cubed
2 carrots chopped
handfull of button mushrooms sliced
Combine first 6 ingredients, add beef and toss.  Heat oil in dutch oven on medium high heat.  Add shallots and beef, cook 4 minutes.  Add garlic, cook 1 minute.  Stir in broth and tomatoes, bring to a boil for 5 minutes.  Stire in potatoes and veggies, simmer for 20 minutes.
Healthy Cornbread:
1/2 cup cornmeal
1/4 cup all purpose flour
1/4 cup whole wheat flour
2 tsp baking powder
1/8 cup honey
1/8 cup unsweetened apple sauce
1 tsp salt
1/2 cup milk
1 egg white
Mix dry and wet ingredients separately, then add wet to dry.  Mix and spread in a greased loaf pan.  Bake at 400 degrees for 20 minutes. 

This meal was completely picky eater approved!! I think I'm starting to get the hang of this thing.  Hope everyone has a good week! Sorry for the long post. My life was obviously way to interesting today.
