Nothing in the fridge WAIW

Since Matt and I are leaving in a 3 days for St. Lucia, we don't have too much in the fridge so my What I Ate Wednesday Post isn't too crazy this week. 
Breakfast: Just guess, I bet you can

Mid morning I needed a pick me up, so I grabbed a starbucks iced decaf with skim and a FREE fruit strip from my gym.  This week they were giving out these along with red bulls free, but red bulls freak me out so I left them for the other gym rats. 

Lunch:
Tuna salad made with carrots, beans, celery and greek yogurt.

Dinner:
Turkey sausage cooked on the grill with peppers and onions and a salad on the side.

Unpictured eats: Before I left work I ate some whole grain pretzels and trail mix to fuel me for an at home workout. I followed this weight lifting plan that I found on pinterest:
I loved this workout and will definitely be feeling it tomorrow.  After I went through this I went over to Blogilates to look for a good abs workout and came across this.
Nice and quick just how I like my abs workouts.  All together this took me just under an hour and then I really tried to stretch out hoping I won't be too sore to run tomorrow.

After dinner I had some dark chocolate and microwaved a banana with some apple butter and peanut butter mixed in. I'm so obsessed with peanut butter that I actually purchased individually sized peanut butter packets to take with me on our honeymoon, along with some KIND bars.



hmmm what else can I not live without?? Chocolate.  I think I'll wait until we get to st. lucia to buy that!

Killer Abs

Hope everyone had a good Easter. Matt and I had a busy day! We woke up and went for a  4 mile run around the neighborhood and then went over to Matt's parent's house for lunch. Then we went to Philadelphia with my parents to meet my brother and his girlfriend for dinner! Lots of good food and wine were had! But today it was back to work :( I wish all companies gave a spring break.

I've been feeling a little flub in the middle lately so I did some searching online today for a good abs workout I could do at the gym before I hopped on the treadmill. I found this workout on Women's Health Magazine's website for "6 pack abs in 6 weeks," we'll see about that lol.   The workout includes a set of 7 different workouts that you go through.  Doing all of them only took me about 15 minutes!
Stability Ball Pelvic Tilt Crunch
3 sets of 12-15 reps, 30 sec rest in between
Walk the Plank and Rotate
2 sets of 8-10 reps
Arm Pull Over Straight-Leg Crunch
3 sets of 15 reps
The Matrix
3 sets of 15 reps
Nose To Knee Crunch
2 sets of 15 reps
Prone Oblique Roll
2 sets of 12-15 reps
Back Extension Rear Leg Raise
2 sets of 15 reps

Overall I really liked the workout. I had some difficulties staying balanced during the prone oblique roll. I fell off the stability ball a couple of times and was really glad that nobody was around to see me being a hot mess haha.

After my ab workout I moved to the treadmill for an interval workout. I really can't run on the treadmill without intervals or I go crazy from boredom.  I started with 2 minutes of walking and then moved on to running 2 minutes at a 6.2 speed and then sprinting for 1 minute at different speeds ranging from 6.4 to 7.4.  I ran the whole thing at a 1.0 interval.  I finished 3.25 miles in 30.30. 

By the time I got home I was pretty hungry so I was really happy that dinner was already pretty much made, Easter Part 2!

Day Off Fun

Today I had off from work and Matt decided to take off even though he didn't have the official holiday so he could hang with me....cuz I'm awesome.   We were a little slow to wake up which I quite enjoyed.  When we actually did wake up we ate a quick breakfast and then went to the gym.  I started out my workout with this abs workout with a side of legs.

Then I went and did 10 minutes on the bike and 20 minutes on the treadmill doing some hill work which killed my calves.  Right now my whole body hurts. My arms are pretty sore from rock climbing yesterday. 

Lunch:
I've been crazy about eggs lately and today was no different.  I cooked up some spinach and then poured some of my egg whites over them.  I had the eggs on a whole wheat deli flat with the most AMAZING cheese spread on it.  There's a place around here called The Back Burner and they make a cheese spread called Better Cheddar that is so addicting.  I wasn't sure how it would taste with my eggs but it was pretty much the best thing ever.



After lunch I went out to the mall on a mission.  Find a dress for my bachelorette party that is coming up in less than 3 weeks.  We are going to Atlantic City, so I figure I should get something a little out of my slightly preppy comfort zone.  I went in about 7 stores....and found nothing haha.  I'm so bad at shopping.  I'm sure I'll find something eventually, or just wear something I already have.  When I got home from the mall it was already time to start dinner. I had big plans tonight.  I found a recipe on pinterest that looked so good I had to give it a go. 

I followed this recipe, but I cut my pork loin in half since it's just Matt and I and froze the other half for later.  The hardest part for me was butterlying the pork loin, something I've never done before.  It turned out pretty well though.  I basically cooked boxed stuffing (minus the butter they suggest) and mixed that with craisins and walnuts.  Then I butterflied the pork loin and stuffed the mixture inside and then rolled and secured with toothpicks.  Then I seared the pork for a couple minutes per side and finished it in the oven at 350 degrees for 45 minutes.




YUM. I'm pretty sure I'll be hitting up the leftovers for dinner tomorrow night. 

Snack:
Microwaved banana for 30 seconds with a spoonfull of peanut butter, greek yogurt and some granolla.
