WAIW Kale Edition

Happy Wednesday and WAIW
 
I managed to get a whole day of eats in pictures...almost, with some of my other favorite meals this week at the end.
Breakfast Smoothie
1/2 cup plain nonfat chobani, 1 banana, 4 frozen strawberries, 1 tbsp PB2, 1 tbsp almond butter, almond milk to get everything moving.
 
Snack:
Almond Flour Muffins! I used this recipe and added some spices, craisins and walnuts. I used egg whites instead of eggs and made them into 6 muffins instead of 4.  I had mine with some pumpkin butter and it was delicious!
 
Lunch:
I've been big on salads lately.  This one was made with spinach, egg whites, black beans, carrots, string beans, avocado and some balsalmic dressing. I also ate half a KIND bar with my lunch.
 
Snack:
unpicuted unsweetened applesauce before my run. easy on the stomach.
 
Run!
5 hot miles!

Dinner:
Ham, Sauteed Kale with black beans and some Annie's Mac and Cheese
 
For my late night snack I had some raspberries with cottage cheese and some dark chocolate.
 
I've been loving kale lately and decided to try kale chips last night.  And guess what? Matt actually liked them! I couldn't believe it!
I cooked the kale chips at 350 for 15 minutes and they came out perfectly crispy. I had them with my favorite buffalo pulled chicken. I cook some chicken breasts in the crockpot all day, and then mix it wiht Frank's Red Hotsauce when I get home. Then I made a blue cheese sauce (2 tbsp blue cheese, 3 tbsp plain greek yogurt, 1 tbsp white vinegar) to put on top.
 
Sunday we went out to dinner with my parents for my dad's birthday and the special of the night was seared tuna....umm yes.
This was amazing. I love seared tuna. Whenever I see it on a menu, I order it.

Weekend Happenings

This weekend has unexpectedly been a lot of fun. We didn't have too much planned going into it, but we ended up doing a couple of spur of the moment things that made the weekend perfect.  Friday night Matt and I were at dinner when we got a call from one of my friends from college who just so happen to be passing through Delaware.  We left dinner and went to main st. to meet her and her fiance for some drinks!

I definitely enjoyed the sangria that I had, but stuck to just one knowing I would be waking up early Saturday for my long run. I was up at 5:45am eating my half bagel with almond butter before heading out to the park.  11 miles was tough. My hips and knees were really sore after I finished, and they still are today. Overall, I think my run went really well thanks to the cool weather.
I finished with a 10.01 pace, my fastest yet! I stopped twice to chug my water/coconut water mix and have a GU Chomp. 
Notice how it was 9am with no sun.  I hope the day of our marathon can be the same way.
 
When I got home I was starving so I whipped up a smoothie to refuel.
1 scoop protein powder, 2 spoonfulls cottage cheese, 1 spoonful peanut butter, a bunch of frozen raspberries. 
 
When Matt and I were both done running, had showered and eaten lunch, we randomly decided to go to the circus down the road.  I saw it on my way home from work on Friday and thought it would be something fun to do during the day.

We had a lot of fun, but I'm pretty sure that we were the only people there without a child next to us hahah.  It will be fun to go back one day when we have kids though.
 
After the circus we went home, had a snack and then went to our friend's house for some pizza and marshmellow roasting. We had a great time catching up with everyone and it was nice to let loose a little. We got home around midnight and I passed out! I was soooooo tired.  I slept so well last night. 
 
When I woke up this morning I decided to do a strength workout after lunch. Matt and I both took advantage of our free weights in our basement.
 
This is my serious face....or my poop face. Can't decide which one.
 
Champ usually just hovers around and gets in the way when we work out, but today Matt decided to use him haha. Champ Squats!
That's a 25lb squat right there!
 
We just got back from seeing The Campaign (which was hilarious) and are getting ready to go meet my parents for my dad's birthday dinner.
 
Hope everyone had a good weekend. 3 weeks and couting until the big half marathon!
