Ready For My Roadtrip

Just a quick post here because I am running around like a crazy person trying to get everything together for my trip tomorrow!  I got a quick workout in at the gym including a great treadmill interval workout.
I ran 3.2 miles in 30 minutes alternating 1 minute sprints and 2 minute jogs.

Since I've been home I have made dinner, packed all my crap up, made a birthday treat for my mom for Saturday when I get back (recipe to come later), made a bunch of snacks to take with me tomorrow and made the grocery list for when I go Saturday night. 

Tomorrow I'm hoping to leave for Virginia at 7am to go see my bff Stef!

Stef works at a vineyard and her boss is letting me borrow 2 wine barrels to use as decor for our wedding.  The room we are getting married in is pretty much a blank slate, so it was either wine barrels or a really tacky arch right from 1980 lol.

Daria Alert

Today was just gross outside. Two days ago I glanced at the weather (ok, i didn't glance, I'm an obsessive weather checker, meteorologist Megan to those I work with) and it was supposed to be 72 and partly cloudy today.  Fast forward and I'm driving to work in a torrential downpoor and the temps don't even reach 60.  That's springtime for you!  We had a doubleheader for volleyball...but I'll get to that later.

Now for What I Ate Wednesday brought to you by my phone lol. 
Breakfast:
Pumpkin Protein Pancakes from Carrots N Cake. 
2 tbsp pumpkin
1/2 mashed banana
1 scoop vanilla protein powder
1 egg (I used egg whites)
1 tbsp flax seed meal
1/2 tsp cinnamon
1/4 tsp nutmeg
I made these last night and then warmed them up in the toaster oven this morning while I was getting ready for work.  I topped mine with some peanut butter and the other half of my banana. These kept me full for almost 4 hours!!

Dinner:
Leftover whole wheat pizza from Monday night.  Hit the spot.  Right now I'm snacking on some dark chocolate and getting ready to pour myself a glass of wine.  And then...I'm passing out.

I totally pulled a Daria today at volleyball. I was so cold that I was absolutely useless.  My toes were completely numb...all 10. 

I totally tried to find the picture where the ball wizzes by and Daria just sticks out her hand without even moving, but I couldn't find it anywhere. This will have to do.  One of the only great things to come out of MTV (besides the Jersey Shore of course haha).

Fun Butt Kicking Workout

Today I did a little searching online for a good strength workout.  I was on women's health magazine's website looking through their printable workouts when I came across the Power Pairs Dumbbell Workout.  This was a great workout.  It went by really fast and I added some cardio bursts for after I was done each cycle. I went through this workout 3 times as follows:

Reverse Lunch With Twist and Bicep Curl

Deadlift To High Pull
Stability Ball Tricep Extension
Plank Hold and Single Arm Row
Squat With Leg Abduction and Lateral Raise
Hamstring Curl With Chest Press (Killer)
V-Sit Incline Press
Side Plank and Rear Fly

After I cycled through these exercises with no rest I moved on to a set of cardio bursts which included:
25 Football Feet
10 Burpees (I hate these so much)
15 squat jumps
25 jumping jacks

After going through this workout 3 times I was so dead.  All together it took me a bit over 30 minutes.  I finished off with 15 minutes of random ab work and stretching and then headed home, no cardio needed. I was huffing and puffing enough during this workout for sure.

When I got home Matt had the oven preheated and the grill started to get dinner ready. I put together some of our favorite black bean burgers last night so they just had to be grilled tonight.
My burger is covered in cheese, but I sweat it's in there. I had veggies and some potatoes on the side!  I love these bean burgers so much that I just packed one up for lunch in a salad tomorrow. 

2 more days of work until I'm off to Virginia and Matt is off to his bachelor party!! Watch out!!

6 Miles Done!

Today I was itching to run all day long. I thought it was going to be a nice sunny day, and it was until about 1pm. Then the clouds took over and the temp barely got over 60 degrees. Oh well, I still wanted to run! I set out with 6 miles as my goal.  I really wanted to try and slow my pace down and take it easy becuase my legs were still feeling a bit stiff.  Somehow my workout on Thursday has caused my hamstrings to kill for 4 days after.

The first 3 miles weren't bad, and then I started to hit some sort of wall. My stomach started churning and my legs got stiff.  My stomach has not been happy with all this wedding stress. It was an absolute mess all weekend, but I thought I was feeling better today.  Apparently not.  I tried to slow my pace a bit and still finished the 6 miles, but it was Not Easy lol.

Dinner was nice and quick yet again.  I made some whole wheat pizza dough last night and Matt took it out of the fridge when he got home from work.  I rolled it out real quick, stuck it in a 425 oven for 5 minutes, put some toppings on and then baked it for another 5 minutes.
My side has pesto, zucchini, broccoli, and mozzarella.  Matt's side has tomato sauce, cheese and turkey pepperoni. 

Yum and we both have leftovers!

Time to go make some black bean burgers for tomorrow night's dinner!

Mud Run, Muffins and Curry

Today Matt and I were up at 5:20am....on a Sunday.  I think we are crazy.  Matt was running a mud run in Milton, De and I was tagging along as photographer.  This didn't make me too happy because I really wanted to be running, but unfortunately it was a 3 person team thing, and Matt was just filling in for a person who had backed out.  I got some pretty good pictures of Matt and his team though, so I guess I served my purpose.
They were supposed to be tinker bell and the lost boys, but I'm pretty sure Matt is the only one who attempted to dress up lol.  Thank goodness for goodwill.

I may have been a tad biased and taken a million pictures of Matt. Oops.

We got home around 1:30 and were both soooo dead.  I made a super quick dinner, thai chicken curry. 
Super easy and delicious.  I used the same recipe for this thai coconut curry shrimp and just replaced the shrimp with chicken.  I also added some frozen bell peppers and broccoli and served everything over brown rice.  For dessert I had half of one of these babies:
Pumpkin Banana Muffins:
2 mashed bananas
1 cup pumpkin
1/4 cup unsweetened applesauce
2 eggs
2 cups flour (I used whole wheat pastry flour)
1/2 cup oats
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2/3 cup sugar
1/2 tsp ginger
1/2 tsp nutmeg
1 tsp cinnamon
Handful of chopped walnuts and craisins (optional)

Combine wet and dry ingredients separately, then add dry to wet.  Preheat oven to 350 degrees and bake for 25 minutes or until cooked all the way through. 

Matt and I both loved these. I'm always looking for things to make with my old bananas.

Wednesday: Volleyball Double Header
Thursday: Gym strength + intervals on treadmill
Friday: Drive to Harrisonburg, VA to pick up some wine barrels for the wedding...you know the usual haha.
