WAIW

I'm so happy it's already Wednesday. Gotta love short weeks! And gotta love What I Ate Wednesday! I know it's all your favorite day of the week lol. 
 
I started out my morning with one of my new favorite breakfasts. The 2 ingredient pancake!
1 egg and 1 banana. That's it. Then feel free to play with other ingredients. I added blueberries to mine before cooking, and then almond butter and pumpkin butter to the top. My friend Chelsea got me the pumpkin butter for my birthday and it's like crack. It's sooooo good.
 
I had a handful of trail mix a while later to get me through to lunch.
Morningstar veggie patty on a deli flat with provolone cheese and spinach. Apple on the side. I'm running a 5k race today after work so I wanted something with carbs for a bit more energy! 
 
When I got home from work I ate an apple cinnamon greek yogurt.
 
I'm getting ready to go into Wilmington for the 5k tonight at 6:30.  When I get home I will most like be chowing on some boring salad, so I will entertain you all with a much more exciting meal, last night's Cheesesteak Stuffed Peppers.  Another pinterest recipe of course.
 
The recipe was so simple. Saute onions and mushrooms, add roast beef, stuff peppers, cover in cheese and bake.

Ummm hello. These were delicious.  Matt loved them too! Success!  I love when I find recipes that we both like.

WAIW Kale Edition

Happy Wednesday and WAIW
 
I managed to get a whole day of eats in pictures...almost, with some of my other favorite meals this week at the end.
Breakfast Smoothie
1/2 cup plain nonfat chobani, 1 banana, 4 frozen strawberries, 1 tbsp PB2, 1 tbsp almond butter, almond milk to get everything moving.
 
Snack:
Almond Flour Muffins! I used this recipe and added some spices, craisins and walnuts. I used egg whites instead of eggs and made them into 6 muffins instead of 4.  I had mine with some pumpkin butter and it was delicious!
 
Lunch:
I've been big on salads lately.  This one was made with spinach, egg whites, black beans, carrots, string beans, avocado and some balsalmic dressing. I also ate half a KIND bar with my lunch.
 
Snack:
unpicuted unsweetened applesauce before my run. easy on the stomach.
 
Run!

Dinner:
Ham, Sauteed Kale with black beans and some Annie's Mac and Cheese
 
For my late night snack I had some raspberries with cottage cheese and some dark chocolate.
 
I've been loving kale lately and decided to try kale chips last night.  And guess what? Matt actually liked them! I couldn't believe it!
I cooked the kale chips at 350 for 15 minutes and they came out perfectly crispy. I had them with my favorite buffalo pulled chicken. I cook some chicken breasts in the crockpot all day, and then mix it wiht Frank's Red Hotsauce when I get home. Then I made a blue cheese sauce (2 tbsp blue cheese, 3 tbsp plain greek yogurt, 1 tbsp white vinegar) to put on top.
 
Sunday we went out to dinner with my parents for my dad's birthday and the special of the night was seared tuna....umm yes.
This was amazing. I love seared tuna. Whenever I see it on a menu, I order it.

WIAW! Protein Packed Edition!

Happy What I Ate Wednesday!  Once again I haven't followed an entire day of eats, just have pictured some of my favorite foods over the past couple of days.

On Saturday after my 8 mile run I decided to try a new protein packed breakfast. I've been wanting to try Tina's Oatmeal Minus The Oats for a while and decided this would be the perfect time. 
Ingredients:
3/4 cup liquid egg whites
1/2 cup coconut almond milk
1 banana mashed
1/2 tsp vanilla extract
2 tbsp flaxseed meal
1 tsp cinnamon

Mix all ingredients and cook on the stovetop until the right consistency for you is reached. It wasn't bad....but it wasn't my favorite thing in the world. I think next time I will make less because I couldn't even finish it.  But I was glad to get a good post run meal in full of protein.

Last night's dinner was also really good:
Turkey Taco Pasta  I followed this recipe, but cut it in half and used turkey instead of chicken. I also used only greek yogurt instead of greek yogurt and cream cheese to thicken the sauce.

I've also been keeping up with my half marathon training schedule. I ran 4 miles outside yesterday after work and it actually wasn't horribly hot out!


Today I am "off" meaning Matt and I have volleyball tonight.  Tomorrow I have 3 plus strength on the agenda and Saturday I will be trying for 8 miles again.

Early Morning Run

This morning I woke up at the crack of dawn, literally.  I was up at 5am to fit in my 3 mile run before work.  I had looked at the weather the day before trying to figure out if I should run before work or after work, knowing that I could not do another treadmill run after my 7.  Well the morning was about 20 degrees cooler than the 100 degree afternoon, so it was a prety easy decision. The hard part was waking up, but I did it.
Miserable haha.  Even though it was 5am, it was horribly humid outside and I came back drenched. I stood in front of the rotating fan for about 10 minutes trying to stop sweating before I got in the shower.
Splits:
Mile 1: 10.01
Mile 2: 9.27
Mile 3: 9.20

Now that my run is out of the way, it's What I Ate Wednesday!
Breakfast:
I added a little more substance to my usual overnight oats by adding 1/2 scoop of protein powder and 1/3 cup oats instead of 1/4 cup. I had a busy morning at work and really needed this to last.

Snack:
Blurry KIND bar. Too busy shoving it into my mouth!

Lunch:
Spinach salad with....celery, broccoli, carrots, blueberries, strawberries, craisins, blue cheese, hummus and black beans.  YUM.  I also had a peice of a CLIF Builders protein bar.

Snack:
Before I left work I ate an apple and some whole wheat pretzels. 

Dinner:
Wrap with slow cooker buffalo chicken, blue cheese mixture (blue cheese, greek yogurt and white vinegar) and spinach leaves. With some Summer Black Bean and Corn Salad on the side.

Snack:
Mini Cookie Dough Blizzard. I love the mini blizzards at DQ. They are the perfect size!

Fitness:
Monday: 7 miles (check)
Tuesday: Abs/Arms weights with light leg work (check)
Wednesday: 3 miles (check)
Thursday: Rest
Friday: 4 miles on the beach
Saturday: 3 miles on the beach
Sunday: Rest

Matt and I leave for OBX tomorrow afternoon! Hoping to fit in the rest of my week of half marathon training while we are there. Love running on the beach! I'm hoping I can convince my sister to run with me!

Avocado's Are So Hot Right Now

The title of my post should obviously be said in the same voice as Zoolander saying "Hansel is so hot right now." Hopefully you guys have a strange sense of humor like myself and love all those pointless movies.  Happy Wednesday by the way. This Wednesday is another What I Ate Wednesday!

I'm warning you all ahead of time, I had a major dinnertime picture fail aka my phone sucks and chooses when it wants to save or delete pictures all on it's own. Just another reason I want an IPhone.

Breakfast:
I was going to make another smoothie today like yesterday, but I needed something to hold me over a bit longer for a long morning so I went with overnight oats instead. The smoothies will definitely be coming back this weekend though! Mid morning I snacked on half a KIND bar to hold me over until lunch.
Lunch was totally random.  I really didn't feel like making anything so I scrounged our fridge for anything I could find that was already cooked. I had some leftover Summer Black Bean and Corn Salad along with sweet potato wedges and almond butter.  After eating this I was still hungry so I had an apple as well.

This took me until about 3pm when I had my pre volleyball snack.

We had volleyball at 5:30, got out around 6:40 and went to Wawa for dinner.  I was STARVING.  I ordered a sandwhich on wheat bread with turkey, cucumbers, tomatoes, onions, spinach and AVOCADO!! This is a new addition to Wawa's list of toppings. I personally think they are just trying to take some of Subway's ideas.
Man they are really working it right now.  So why so popular??

Scoop of peanut butter and chocolate. YUM

I have 4 miles to run tomorrow after work!!  I'm going to go do some stretches to try and loosen up my hips for tomorrow.

Shmoops I'm A Bad Blogger

Hello everyone! It's been a busy week here for me so I've kind of fallen off the blogging wagon. But, I'm back. So what's been going on with me you ask?? Oh pretty much the same as usual.  Sleep, eat, work, workout, eat, sleep.  Exciting stuff I know. 

Workouts:
I've been continuing my first week of my half marathon training schedule by completing 3 miles on Tuesday outside at a 9.24 pace.  It felt a lot better than my run on Monday.  On Wednesday we had volleyball, so no running there!  Today I went to the gym and completed this strength workout before hopping on the treadmill:
Complete 3 Rounds:
12 Deadlift to Bent Over Row (15lb dumbbells)
10 Rep Benchpress (15lb dumbbells)
10 Reps Each Arm Single Arm Dumbbell Squat Swing (15lb dumbbell)
8 reps alternating front and side arm raises (8lb dumbbells)
20 Air Squats

Treadmill:
Alternating 2 minutes "jog" and 1 minute "sprint" for 2.5 miles, then run 0.5 miles at 9.30 min mile.

I'm planning my long run (not really) this week for Saturday morning. I'm going to have to get up at the crack of dawn and rock my water belt before it hits 95 degrees that day.

Food:
Here is my What I Ate Wednesday post a day late! I took all the pictures yesterday, but didn't get home until after 8:30 last night and was pooped.
Breakfast:
Apple Cinnamon Overnight Oats Goodness.  I live for breakfast every morning.

Snack:
Cherries!! and...
I got a box of mini KIND bars in assorted flavors, but I think I still like the almond cashew the best.

Lunch:
Tuna salad made with veggies and hummus and an apple. I also had a bite of a luna protein bar.

Before Volleyball:

Dinner:
 I met my friend at Iron Hill Brewery for dinner and ordered the grilled chicken breast with red quinoa.
This was really good. The sauce they used was nice and tart from the granny smith apples. When I finally got home I sat down with Matt to watch the rest of the swimming olympic trials and munch on some dark chocolate.

I'm so excited that there is only one day left in the week. We have a pretty open weekend, which never happens! I think we are going to enjoy it!

One Busy Wednesday

Hello all. It has been one crazy day so far. I'm just glad to be sitting down lol!  At least there are only two days left in the week, and tha means it's What I Ate Wednesday.


I started off my morning with a new favorite overnight oats recipe. The ingredients....no sugar added applesauce, nonfat plain greek yogurt, old fashioned oats, cinnamon and nutmeg.
I mixed one of these little guys with 1/4 cup greek yogurt, 1/4 cup oatmeal and a shake of cinnamon and nutmeg.  Then I put it in the fridge overnight and it was ready to go with a few toppings the next morning.

Mid morning my stomach was grawling! I had an apple and drank a glass of water to try and stay hydrated. It was almost 100 degrees here today and we had a double header in volleyball after work.  That means 2 hours of volleyball in the hot summer heat.

Lunch was also a new favorite of mine. I cooked up some quinoa and mixed it with a bunch of cooked veggies and chickpeas.  Then I drizzled a bit of bbq sauce on top. YUM


And some cherries on the side. I'm loving cherry season!

Right after work I was heading to the hair dresser to get my "wedding hair" chopped off!  I grew my hair out for over a year and I've been hating it. From the hair dresser I went straight to volleyball for our double header. Before I left for volleyball I finished my cherries and ate my favorite KIND bar.

By the time 6:30 hit I was getting hungry yet again. After our first game I found a kind soul on the sideline offering up some orange slices. Yes please. After our games, in which I totally sucked ass, Matt and I grabbed a quick dinner at WAWA.  7pm is way too late for me to go home and make a full dinner.
My sandwich was a turkey, cheddar cheese, cucumber, tomato, spinach, onion, and oregano on rye bread. I ate half and saved the other half for lunch tomorrow. I dipped it in a big pile of hummus!! After dinner I had a big spoonful of peanut butter with some chcolate chips on top. Then I worked on my grocery list for tomorrow, watered the plants, and just about passed out on the couch.  Thank God Real Housewives of Orange County is on damand for me to watch! Love my trashy TV. 

Tomorrow is going to be another scorcher, so I'll be headed to the gym for my run on the dreadmill. Mrrrrrr. Oh well. Hopefully I'll get a good run in outside this weekend.
