Loving Iced Coffee!

Good morning everyone! Hope you're all having a good weekend. Mine has been pretty great so far.  I've been making a lot of these:
I've been making my coffee in my Keurig, popping it in the freezer for a few minutes, then adding ice and coconut milk. YUM.  Little known coffee fact: I can only drink decaf coffee or I'll be running to the bathroom all day long lol.

Lunch yesterday was something new. I'm always looking for new ways to make my tuna salad and I came across a website where they made it with pesto. So I gave it a go:
Tuna, pesto, black beans, celery and carrots.  It was pretty good, minus the fact that it made my breath stink the rest of the day.

For dinner, Matt and I went out on a little date night.
Chicken with roasted portabellos, mixed veggies and roasted potatoes.

This morning we both headed to the gym together because we are expecting the heat to get up to over 100 degrees! They are pretty much telling us not to step foot outside today. Awesome.  Matt worked with me on some new abs moves and then we both hopped on the treadmill for 3 miles.
3 Miles On The Tready:
3 minute warm up @ 6.0
7 minutes at 6.2 (race pace)
Minutes 11-19 alternate 2 minutes at Incline 0 and 1 minutes at Incline 1.0, 2.0, or 3.0
Minutes 19-3 miles alternate 1.5 minutes @ speed 6.2 and 1 minutes at 6.4, 6.6, 6.8 or 7.0

I got to 3 miles in 28.50 (9.36 overall pace)

When I got home I was really excited for my lunch. I went out and got some of those veggie patties from the 4th of July.
These are some of the best veggie burgers I've ever had. YUM
Made mine with a slice of cheese and some lettuce on the top on a whole wheat deli flat.

Apple, some KIND bar and an iced coffee. 


Today I'm going to my friend's baby shower at a tea house, then over to the in laws house for a crab feast!

Crossfit At Home Workout

Today after work I headed to the gym for some weight training since I got my long run in yesterday morning.  I started out with some machines that I can't remember the name of.  One of them I just call the armpit fat machine haha.
I think I make this same face while i'm using this machine hahah. Durf.

After a few arm machines I moved on to this cycle of exercises:
Complete 3x through
12 x deadlift w/ 15lb dumbbells
12 x sumo squats w/ 20lb dumbbell
12 x bent over row w/ 15lb dumbbells

Once I was feeling sufficiently warmed up I went through this Crossfit like workout from Blonde Ponytail.
Once I got through this 5 times I was pretty tired. It took me right around 25 minutes to complete the workout.  When I finished, I still had a couple minutes before I wanted to leave the gym so I hopped on the elliptical for a little less than 20 minutes:
I used an elliptical similar to this one.  I like this model becuase you can increade the incline so that you are taking huge knee high steps and you can increase the resistance up to 100.  I alternated between 25 and 35 because my legs were pretty much spent. I stayed at each resistance for 2 minutes, sprinting the last 30 seconds of each 2 minute interval.
Then headed home for some dinner:
HAM!!! I love ham, not even kidding.  I also had some cucumbers from our garden, carrots, zucchini fries, corn and a slice of garlic toast.

The zucchini fries were left over from our bbq yesterday.  Making them was super easy:

You'll need:
sliced zucchini
panko breadcrumbs
parmesean cheese
salt
pepper
egg whites

Mix panko breadcrumbs, cheese, salt and pepper together in a bowl (no measuring here for me, I just eyeball it).  Cut zucchini into fries, dredge in egg whites and dip into panko mixture. Place on a sprayed baking sheet and pop in the oven at 425 for 20 minuts.  They even tasted good the day after. I just popped them in the toaster oven to crisp them up again. So good!

Sweaty Butt 4th of July

Holy hot outside! These past two days have been rediculously hot! I got home from work yesterday and got a quick half hour workout in down in our at home gym aka our basement.  When I was at work I saw this workout online and had to do it:

This arm workout was awesome! I woke up this morning with some serious sore tricpes and shoulders.  I didn't want to do any leg work yesterday because I was planning on doing my long run this morning.  I woke up around 7:30am, ate a banana with some peanut butter and headed over to UD campus for my run with Matt.  We both had 5 miles on the menu....and man was it humid.  My first 3 miles were alright, but then the heat was started to get to be too much.  I stopped at miles 2, 3 and 4 to drink water from my sweet water belt.
SOOOO HOTTTT.
I finished my run in 48.25.
Mile 1 (warm up): 9.58
Mile 2: 9.37
Mile 3: 9.31
Mile 4: 9.41
Mile 5: 9.34

When I got home I needed fuel! I ate a greek yogurt with quaker oatmeal squares in it and a protein cookie.
I finally convince Matt to try my yogurt after he realized it had 14g of protein compared to his La Yogurt's 4g.  And....he liked it! I'm going to buy him a couple this week.  Nobody can resist the goodness of greek yogurt! The protein cookies are I made based off of this Peanut Butter and Jelly Protein Cookie Recipe.  They are....alright.  Mine turned out a little dry, so next time I think I might have to add something extra, maybe more jelly. 

After our run we had some friends over for a bbq for the 4th! And yes I'm a nerd and sported my red, white and blue!
And my newly chopped hair. I'm in love with having short hair again!  I will never grow my hair out again....unless I have to get married again hahah. J/k Matt! 

I'm awesome and was so overwhelmed by the people, babies and dogs that I didn't take a single pic except for the above one of me being a nerd in the bathroom.  We did have some good eats though.  My brother and sister in law recently gave me some morningstar veggie burgers to try and I have to say they were really good. I haven't found a strore bought veggie burger that I like until now. I just texted  them to see what flavor they were so I can buy some for myself.  I also snacked on some southwester coleslaw, baked zucchini fries and cheese and crackers.  And of course no 4th of July is complete without drinks!

I found this recipe for a skinny pina colada on Carrots N' Cake.
2 shots Pineapple Juice
2 shots Coconut Water (Vitacoco is my favorite)
1 shot coconut rum

These were so easy and they were a hit!  Everyone left around 4:30 and by that time Matt and I were getting hungry again.  We each whipped up our own dinner of randomness:
Egg white scramble with home grown spinach, chicken sausage and black beans.  Sweet potato wedges and an apple on the side with some almond butter.  PS sweet potatoes and almond butter are really really good together.

This is such a weird week. Back to work tomorrow for 2 days.  I guess I'll take it!

Monday...or Thursday I Should Say

Happy Monday/Thursday.  This week is so weird having Wednesday off from work.  We are having a bunch of friends over for a BBQ on the 4th and I can't wait!  My brother in law gave me some veggie burgers to give a try and I am really looking forward to it.  I haven't been a fan of some of the one's I've tried in the past, but he said they were good, so I'm going to try them. 

Today after work I was planning on going to the gym to run my 3 miles on the treadmill since it was supposed to be above 90 degrees this afternoon.  I checked the weather before I left work and it said 91 degrees and windy.  Windy sounded nice. I went outside and it wasn't half bad so I decided to run outside! I completed my 3 miles in  28.51.  I didn't have my Garmin with me, but I downloaded a stopwatch ap on my phone and just used that instead.

When I got home from my run I went down in the basement and did 15 minutes of ab work.  Then got started on dinner.

Crabcakes were on sale for 99 cents each this week at our grocery store. I cooked up a couple of those and some sweet potato wedges.  Salad on the side!

After dinner I did a little bit of baking (I'll get to that tomorrow) and then Matt asked me if I wanted to go get frozen yogurt. Hmmmmmm. Yes.  This is why I work out haha.  We went to Dairy Queen for a little snack.  During the summer I try to keep my ice cream indulgences in check to about once a week.  When I was younger it was my biggest weakness.  I'm talking I would eat it every single night after dinner.  Once a week is a lot better for me than every night haha.  That way it seems like more of a treat when I actually have it. It's no secret that sweets are my vice, and they always will be, but I've learned to control them a lot more than before.

I told Matt today that he should be the one with the running blog. Matt ran 9 miles today. He's pretty kick ass!! He's going to be ready for that half marathon in a couple of weeks I swear!

Weekend Recap and Weekly Plan

Hey everyone, so sad the weekend is almost over.  Matt and I didn't have too much planned for this weekend, so it wasn't too busy.  We realized that we really don't know what to do when we aren't busy. Basically, we don't know how to relax...awesome haha.
I woke up Saturday morning around 7:00, ate a banana and some peanut butter and then drove to Glasgow Park to run my 4 miles before it got too hot.  When I first started, it wasn't too bad.  Once I got to mile 3 I was really feeling the heat. I'm so glad I wore my water belt. That thing was a life saver.
Oh yea look at that arm sweat.  My average pace was 9:38.  My legs felt really good, but I definitely realized that I'll need to slow my roll a bit with how hot it's been this summer. I miss those cool  spring and fall days!

For lunch on Saturday I copied a recipe I found on Tina's Blog.  She made a sweet potato quesadilla that looked amazing.  I stuffed my quesadilla with mashed sweet potato, black beans, spinach leaves and cheddar cheese.  So good!  I've really been craving sweet potatoes so this really hit the spot.
Believe it or not, this was not the last time I ate a quesadilla this weekend.  I'll get to that later.  My dinner on Saturday was also...interesting. I knew I wanted eggs so I just put some veggies and eggs in a pan.  Then I found this in the fridge:

Guac on eggs wasn't half bad. 

Matt and I watched the olympic trials for gymnastics, swimming and track the rest of the night, along with his sister and her husband for company!  Then we passed out:

Sunday morning I started out with a random stregth workout. I pretty much took three different workouts I've done in the past and combined my favorite parts making for a 45 minute workout at home.  My favorite part of the workout was using the barbell that Matt's parent's let us borrow.  It might be from 1960, but it works just the same.  I weighed the bar this morning and it is 20lbs. I added 5lbs to each side for both my deadlifts and squats.
I swear this is actually 30lbs and not 5 haha. It really looks like nothhing.  After my workout Matt and I headed to the lake for the afternoon to get some sun.

After the lake we ran some errands to get ready for our 4th of July BBQ.  Then I  got started on dinner....more quesadillas. I cooked up some chicken sausage for the filling along with some green peppers, onions, black beans and spinach.
YUM.  I think this one was a little better than the sweet potato one.
WEEK 2 SCHEDULE:
I'm changing my sched around a bit since we have Wednesday off for the 4th. I'll be doing my long run Wednesday instead of Saturday.
Monday: 3 miles and abs
Thuesday: rest/yoga/pilates
Wednesday: 5 miles
Thursday: Stregth and Crosstrain
Friday: Rest
Saturday: 3 miles
Sunday: 3 miles and strength

Week 2 will give me 14 miles!
