A Day of Firsts

Today we woke up to a fresh coat of snow  ice on the ground.  It's our first snow of the season which isn't bad considering what we got slammed with the past two years.  I ate my usual breakfast plus one new thing...Chia Seeds.  I have been reading all about them from fellow bloggers so I picked some up last night and mixed them into my overnight oats.
I couldn't taste any difference, but I did notice that I stayed fuller longer. My breakfast lasted me 4 1/2 hours! Since it was so icey outside I've saved my gym workout for tomorrow. I did get in a good 45 minute workout at home though.

Then I moved on to this sparticus workout.  And then I went back through the cardio/strengh workout above again. All together it took me 45 minutes. Once it stopped snowing, Matt and I went out to the mall to run some errands and grab lunch which means...SALADWORKS. My love

For dinner I had left over salmon from last night and then cooked up something I've never tried before. Brussel sprouts.  I baked them at 400 degrees for 35 minutes. I topped them with cheese because I was afraid that I wouldn't like them and I figured everything tastes better with cheese.

And of course I had to finally give in to my sweet tooth so I made these mini apple pies.
they definitely didn't turn out as pretty as I hoped they would but hey they still tasted good.

Just sitting down to watch Moneyball. Not sure if I'll like it because I hate baseball (more of a football kind of gal) but Brad Pitt's in it so it can't be too bad haha.

Three things thursday

Today was blah.  My legs are hurting from my 5 mile interval run yesterday, so I did an easy 45 minute pilates workout on demand today.  Dinner was also pretty boring...leftovers from Monday night
You can pretty much guarantee that we will be eating leftovers on Thursay night because I find it impossilbe to cook for only two people. Cutting every recipe in half or in thirds is just too much work  for me at the end of the day.

Three Things Thursday
1. I'm Feezing!  It's officially back to winter here on the east coast.  I miss our random days in the 50's.  We are actually expecting our first "snow" on Saturday (usually ends up being that good old wintery mix here in Delaware.
Matt is such a lucky man to have this sexy thing walking around the house.  And he obviously had to point out that my headband was on upside down and insisted on taking a picture.
2. I'm craving sweets...and they are everywhere! All I've been thinking about lately is dessert. It doesn't help that all this left over christmas chocolate is still hanging around our house and my office at work. I'm hoping to think of something semi-healthy to make this weekend to curve my cravings. 

I might have to try these mini apple pies. It's all about portion control after all right??

3. I finally did it...I joint Pinterest! I've had several friends send me invite emails in the past couple of months and I finally gave in.  I joined pinterest.  I'm still trying to get the hang of it and am not convinced it's worth all they hype yet.  I have found some new recipes and found some new workouts so far so I can't knock it too much. I found this recipe on it and would love to make these cute mini lasagnas when we have company.

And apparently I'm really into mini foods lately too haha. So happy tomorrow is Friday.  Matt and I are going out to celebrate that he still has a job.  His company had lay-offs this past week and it was definitely weighing on both of us.  And now we are finally feeling secure enough to plan our honeymoon!
St. Lucia??? Yes Please!

Not Impressed....

Last night was our food tasting for the wedding and let's just say we were less than impressed.  They had different groups of people coming in every 20 minutes to try appetizers and entree options.  When we all first got there we were really excited!

The food was delivered and was kind of blah.  I think they cooked everything ahead of time and then it just sat, waiting for people to arrive. I've been to another event they catered and the food was really good, so fingers crossed that they will step up their game on the day of.
Cocktail hour appetizers we chose:
Mini Crab Cake
Broccoli Bite
Bruschetta
Scallop wrapped in bacon

Entree/sides
Filet Mignon
Herb stuffed chicken
Grilled vegetables
Mashed potatoes

After last night's eating marathon I was ready to eat well and run today. I started my day off with oats in a jar.
1/3 cup old fashioned oats, 1 container pomegranate greek yogurt, splash of skim milk, granolla, craisins, spoon full of almond butter
Left over turkey burger for lunch from dinner on Friday (I know that's stretching it a bit but whatevs)
Dinner was a chicken fajita on a whole wheat tortilla filled with peppers, onions, black beans, spinach and cheddar cheese. YUM!

Afer work I went to the gym to run since it was pretty cold and windy out today.  I had been thinking about running all day so I knew it would be a good one.  I ran for a total of 5 miles in 47:30.  I started with a 5 minute warm up and then did five minute sets of 3 minutes run and 2 minutes sprint.  My run speed ranged from 6.0 to 6.3 and my sprint speed ranged from 6.4 to 7.2.  For dessert I will be having one of these bad boys just delivered to my house:


And another goodie delivered to my house today...my wedding earings!
They are pear shaped vintage style studs. Love them! Don't worry they are obviously fake haha. I only wish they were real.

You must be a teacher....or work for the government


Today I had off for MLK day thanks to my government funded company! Even though I had off I still woke up with Matt who was not so lucky at 5:45am.  I had a lot I wanted to get done so I got started on my list.  I started writing my personal statement for school and ordered my shoes and earings for the wedding. Then I decided to go upstairs and watch some KKTNY (Kourtney and Kim Take New York for those of you not in the loop).  Right when I'm enjoying the juicy episode I notice Champ being extra quiet.  I walk into the other room and wouldn't you know it a giant turd is staring me in the face.  Way to start the morning off right Champ. Glad I walked you an entie 30 minutes before you decided to drop that deuce. Well at least he didn't eat it...not to my knowledge anyways.
After I cleaned up the pile of poop I headed out to the mall to get some supplies to make my neice's flower girl basket.  Let me just put it out there that I am not a crafty person at all. This is what I ended up with.

After the mall I went to the gym! I got there around 11:30 and got in 30 minutes of weights before my spin class started.  It's been about a year since I took a spin class and I forgot how much I love them. The class was 45 minutes and I was drenched by the time I left the room. 

Dinner tonight was one of my favorites Gnocchi with spinach and white beans.  I made it just like last time with two changes.  I found whole what gnocchi that I used instead of regular and I also only used half the amount because I added two links of turkey sausage for a little more protein.

I had mine with some veggies and hummus on the side. 

Tomorrow night is our food tasting at the wedding venue.  I'll try and remember to bring my camera and take some pictures of the yummy food!

The Prettiest Thing I've Ever Made

Hello all! I'm sorry to say this weekend I was not on my game.  Matt and I were running around like crazy all weekend visiting family and doing things around the house and for the wedding. We had a nice date night on Friday to one of our favorite place right down the street. I had possibly the best turkey burger ever!!

Then we ran some errands...home depot, the kitchen store and babies r us before going over to my parents house to help my dad carry out their HUMUNGOUS TREE!

Saturday morning I woke up late after an unheard of 10 hours of sleep! I ran to the gym and got in an hour workout before rushing home and getting ready to go over to Matt's parent's house for xmas #7 (?) with Matt's extended family from Virginia

This morning I went to a bridal expo with my mom to look at some last minute things.  We didn't find too much but did manage to talk to some florists and alcohol distributors!! Then we grabbed some brunch on main st.  We went to one of my favorite restaurants, but I was very dissapointed in my meal.  I ordered the veggie omlet and when it came out it was dripping in grease.  My stomach hurt most of the day because of it.  I still tried to get in a workout when I got home.  I did a 45 minute kickboxing video that got me sweating.  Then moved on to my BEAUTIFUL dinner!
Individually Sized Chicken Potpie (from eating well)
1 chicken breast chopped into chunks
1/2 cup chopped shallots
1/2 bag frozen mixed vegetables thawed
1/8 tsp dried thyme
1 cup reduced sodium chicken broth, divided
1/8 cup cornstarch
1/8 cup low fat sour cream
salt, pepper to taste
refrigerated pie crust
Preheat oven to 425 degrees.  Heat some olive oil in a nonstick pan and then add chicken and cook until browned.  Remove chicken and place on a plate.  Add a little more olive oil to the pan and then add shallots and cook 2 minutes.  Then add in vegetables, thyme, salt and pepper.  Cook 2 more minutes.  Add in 3/4 cup chicken stock and bring to a boil.  In another bowl mix together remaining 1/4 cup chicken stock and 1/8 cup cornstarch.  Then add to pan and bring to a boil again.  Cook 1 minute or until thickened.  Remove from heat and mix in chicken and sour cream. Divide mixture into two 12 oz baking dishes.  Roll out pie crust and cut two circles to fit over dishes.  Brush with egg white and cut 4 slits in the top.  Bake for 20 minutes. ENJOY!

So pretty I didn't want to eat it...but I did obviously.  I've made other chicken potpie recipes before and this was by far the easiest one I've made. 

Time to go watch the golden globes and see all the horrible dresses! Love it! Hope everyone had a good weekend....looking forward to my extra day off tomorrow.
