WAIW Kale Edition

Happy Wednesday and WAIW
 
I managed to get a whole day of eats in pictures...almost, with some of my other favorite meals this week at the end.
Breakfast Smoothie
1/2 cup plain nonfat chobani, 1 banana, 4 frozen strawberries, 1 tbsp PB2, 1 tbsp almond butter, almond milk to get everything moving.
 
Snack:
Almond Flour Muffins! I used this recipe and added some spices, craisins and walnuts. I used egg whites instead of eggs and made them into 6 muffins instead of 4.  I had mine with some pumpkin butter and it was delicious!
 
Lunch:
I've been big on salads lately.  This one was made with spinach, egg whites, black beans, carrots, string beans, avocado and some balsalmic dressing. I also ate half a KIND bar with my lunch.
 
Snack:
unpicuted unsweetened applesauce before my run. easy on the stomach.
 
Run!
5 hot miles!

Dinner:
Ham, Sauteed Kale with black beans and some Annie's Mac and Cheese
 
For my late night snack I had some raspberries with cottage cheese and some dark chocolate.
 
I've been loving kale lately and decided to try kale chips last night.  And guess what? Matt actually liked them! I couldn't believe it!
I cooked the kale chips at 350 for 15 minutes and they came out perfectly crispy. I had them with my favorite buffalo pulled chicken. I cook some chicken breasts in the crockpot all day, and then mix it wiht Frank's Red Hotsauce when I get home. Then I made a blue cheese sauce (2 tbsp blue cheese, 3 tbsp plain greek yogurt, 1 tbsp white vinegar) to put on top.
 
Sunday we went out to dinner with my parents for my dad's birthday and the special of the night was seared tuna....umm yes.
This was amazing. I love seared tuna. Whenever I see it on a menu, I order it.
 
 
 
In other news. 2.5 weeks til the big race!!! Let the countdown begin!

  3. Ah! Frank's is great with everything! I will have to try the slow-cooked chicken mixed with it. It sounds like it would fulfill my occasional craving for buffalo wings.
